Preparing the Chicken
Marinate the Chicken
In a bowl, combine olive oil, salt, and black pepper. Coat the chicken breasts in the mixture and let marinate for at least 30 minutes.
Grill the Chicken
Preheat a wood-fire grill. Grill the marinated chicken breasts for about 6-7 minutes per side or until they reach an internal temperature of 165°F (75°C).
Add Jalapeños and Cheese
During the last 2 minutes of grilling, add sliced jalapeños on top of the chicken and place a slice of pepperjack cheese over each breast to melt.
Cooking the Bacon
Cook the Bacon
In a skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels.
Assembling the Sandwich
Prepare the Brioche Buns
Toast the brioche buns on the grill or in a toaster until golden brown.
Layer the Ingredients
On the bottom half of each brioche bun, add a leaf of lettuce, followed by the grilled chicken with jalapeños and melted cheese, crispy bacon, tomato slice, onion slice, and finally a generous dollop of lime aioli.
Complete the Sandwich
Place the top half of the brioche bun on top of the assembled ingredients. Press down gently to secure.
