Tamales Preparation

    Cook the Pork

    In a large pot, combine the pork shoulder, water, salt, cumin, and garlic powder. Bring to a boil, then reduce heat and simmer for about 2 hours, or until the pork is tender and easily shreds with a fork.

    Shred the Pork

    Remove the pork from the pot and let it cool slightly. Shred the pork using two forks and set aside. Reserve the cooking liquid for later use.

    Prepare the Masa Dough

    In a large bowl, combine corn masa harina and baking powder. In another bowl, beat the lard or vegetable shortening until fluffy. Gradually add the masa mixture and chicken broth, mixing until a soft dough forms.

    Soak Corn Husks

    Soak the corn husks in warm water for about 30 minutes, until they are pliable.

    Assemble Tamales

    Take a soaked corn husk and spread about 2 tablespoons of masa dough on the lower half of the husk. Add 1-2 tablespoons of shredded pork on top of the masa. Fold the sides of the husk over the filling and then fold the bottom up to enclose the tamale. Repeat with remaining husks and filling.

    Steam the Tamales

    Place the assembled tamales upright in a steamer basket. Add water to the bottom of the steamer and cover. Steam for about 1 hour, or until the masa is firm and fully cooked.

Tomatillo Salsa Preparation

    Roast the Tomatillos

    Preheat the oven to 425°F (220°C). Place the tomatillos and jalapeño on a baking sheet and roast for about 15 minutes, until they are soft and slightly charred.

    Blend the Salsa

    In a blender, combine the roasted tomatillos, jalapeño, onion, cilantro, lime juice, and salt. Blend until smooth. Adjust seasoning to taste.

Serving the Dish

    Plate the Tamales

    Serve the tamales topped with a generous spoonful of tomatillo salsa.

    Add Sides

    Garnish with crumbled queso fresco and serve with fresh lime wedges, refried beans, and Spanish rice on the side.
