Cooking the Steak

Remove the flank steak from the refrigerator and let it sit at room temperature for about 20 minutes. This helps it cook more evenly.

In a small bowl, mix together olive oil, salt, black pepper, garlic powder, and paprika. Rub the mixture all over the flank steak.

Preheat a grill or stovetop grill pan over medium-high heat. Once hot, add the flank steak and cook for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.

Prepare the Greens
In a large bowl, add the mixed greens as the base for your salad.

Top the mixed greens with corn salsa, pico de gallo, and crumbled queso fresco.

Thinly slice the rested flank steak against the grain and arrange it on top of the salad.

Slice the avocado in half, remove the pit, and scoop out the flesh. Cut into slices and add them to the salad.
