Preparing the Beef Tenderloin

Season the Beef
Rub the beef tenderloin filets with chipotle powder, salt, and black pepper on all sides.

Sear the Beef
In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned beef tenderloin filets and sear for 3-4 minutes per side for medium-rare. Remove from skillet and let rest.
Making the Iowa Corn Salsa

Combine Ingredients
In a bowl, combine fresh sweet corn kernels, diced red bell pepper, diced red onion, chopped cilantro, lime juice, and salt. Mix well and set aside.
Frying the Crispy Onions

Soak Onions
Place the thinly sliced onion in a bowl and cover with buttermilk. Let it soak for at least 30 minutes.

Prepare Coating
In a separate bowl, mix all-purpose flour, cornstarch, and salt.

Making the Lime Aioli

Mix Ingredients
In a small bowl, combine mayonnaise, lime juice, minced garlic, and salt. Whisk until smooth and well combined.
