Preparing the Salmon

    Make the Orange Chipotle Glaze

    In a small saucepan, combine orange juice, chipotle peppers, and honey over medium heat. Simmer for about 10 minutes until slightly thickened. Remove from heat and set aside.

    Prepare the Salmon

    Preheat the grill to medium-high heat. Brush the salmon fillets with olive oil and season with salt and black pepper. Place the fillets on the grill skin side down.

    Grill the Salmon

    Grill the salmon for about 5-6 minutes per side, basting with the orange chipotle glaze during the last few minutes of grilling. Remove from the grill when cooked to your desired doneness.

Preparing the Asparagus

    Prepare the Asparagus

    While the salmon is grilling, wash and trim the asparagus. In a large bowl, toss the asparagus with olive oil, garlic powder, lemon juice, salt, and black pepper.

    Grill the Asparagus

    Add the seasoned asparagus to the grill during the last 4-5 minutes of the salmon cooking time. Grill until tender and slightly charred, turning occasionally.

Preparing the Spanish Rice

    Sauté the Onions and Garlic

    In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Then add the minced garlic and cook for another minute.

    Cook the Rice

    Add the rice to the saucepan and stir for 2 minutes. Pour in the chicken broth, tomato sauce, cumin, paprika, and salt. Bring to a boil.

    Simmer the Rice

    Once boiling, reduce heat to low, cover, and simmer for 20 minutes or until the rice is tender and the liquid is absorbed. Fluff with a fork before serving.
