Roast Pork

Add Juices and Bay Leaves
Place the pork in a roasting pan and pour the orange juice and lime juice over the meat. Add the bay leaves.

Shred the Pork
Remove the pork from the oven, let it rest for 15 minutes, then shred the meat with two forks.
New Mexico Green Chile Sauce

Add Chiles and Broth
Stir in the roasted green chiles, chicken broth, cumin, and salt. Bring to a simmer and cook for about 10-15 minutes.

Blend the Sauce
Use an immersion blender to blend the sauce until smooth. If using a regular blender, carefully transfer the sauce and blend in batches.
Pickled Onion

Combine Ingredients
In a bowl, combine the thinly sliced red onion, apple cider vinegar, sugar, and salt.

Pickle the Onions
Let the mixture sit for at least 30 minutes at room temperature, or refrigerate for up to a week for deeper flavor.
Refried Beans

Mash the Beans
Add the cooked pinto beans to the skillet and mash them with a fork or a potato masher. If it's too thick, add a little water or broth.

Season the refried beans with salt to taste and cook until heated through.
Spanish Rice

Add Tomato Sauce and Broth
Stir in the tomato sauce and chicken broth. Bring to a boil, then reduce heat to low and cover.

Simmer for about 20 minutes, or until the rice is cooked through and the liquid is absorbed.
