Tortilla Preparation

Make the Tortilla Dough
In a large mixing bowl, combine all-purpose flour, salt, and baking powder. Mix well.

Add Oil and Water
Add vegetable oil and warm water to the dry ingredients. Stir until the mixture forms a soft dough.

Knead the Dough
On a lightly floured surface, knead the dough for about 2-3 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Roll Out the Tortillas
Divide the dough into 6 equal portions. Roll each portion into a thin circle using a rolling pin.

Cook the Tortillas
Heat a non-stick skillet over medium heat. Cook each tortilla for about 1 minute on each side until lightly browned and cooked through. Set aside.
Cheese Assembly

Prepare the Cheese Blend
In a mixing bowl, combine cheddar cheese, Monterey Jack cheese, and softened cream cheese. Mix until well blended.

Fold and Cook
Fold the tortilla in half over the cheese. Cook for 2-3 minutes on each side, until the cheese is melted and the tortilla is golden brown.

Repeat the process with the remaining tortillas and cheese blend.
Serving

Plate the Quesadilla
Slice the quesadilla into wedges and serve hot.
