Marinade Preparation

    Mix the Marinade

    In a small bowl, whisk together the olive oil, lime juice, chili powder, garlic powder, cumin, salt, and black pepper until well combined.

Marinating the Mushrooms

    Prepare the Mushrooms

    Clean the portobello mushrooms with a damp cloth, and remove the stems.

    Marinate the Mushrooms

    Place the portobello mushrooms in a shallow dish or a resealable bag. Pour the marinade over the mushrooms, ensuring they are well coated. Allow them to marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

Cooking the Mushrooms

    Grill the Mushrooms

    Preheat your grill or grill pan over medium-high heat. Remove the mushrooms from the marinade and place them on the grill. Cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks.

Assembling the Dish

    While the mushrooms are grilling, crumble the queso fresco, chop the fresh cilantro, and slice the avocado.

    Once grilled, remove the portobello mushrooms from the heat and place them on a serving platter. Top each mushroom with crumbled queso fresco, fresh cilantro, and sliced avocado. Serve with lime wedges on the side.
