Pork Chops

    Prepare the Chipotle Glaze

    In a small bowl, mix the chipotle peppers in adobo sauce, brown sugar, soy sauce, garlic powder, salt, and pepper to create a glaze.

    Season the Pork Chops

    Pat the pork chops dry with paper towels, then season both sides with salt and pepper.

    Cook the Pork Chops

    Heat a skillet over medium-high heat and add a little olive oil. Once hot, add the pork chops and sear for 3-4 minutes on each side until golden brown. Brush the chipotle glaze over the pork chops during the last 2 minutes of cooking, ensuring they are well coated.

Asparagus

    Prepare the Asparagus

    While the pork chops are cooking, trim the woody ends off the asparagus. Toss the asparagus with olive oil, salt, and pepper.

    Cook the Asparagus

    In a separate skillet, add the asparagus over medium heat and sauté for about 5-7 minutes until tender and slightly caramelized.

Mexican Rice

    Cook the Rice

    In a medium pot, combine the long-grain rice, chicken broth, tomato sauce, cumin, chili powder, garlic powder, and salt. Bring to a boil, then reduce to a simmer, cover, and cook for 18-20 minutes until the rice is tender and all liquid is absorbed.

Saladeo with Garlic & Lime Dressing

    Prepare the Dressing

    In a small bowl, whisk together lime juice, olive oil, minced garlic, salt, and pepper.

    Assemble the Salad

    In a large bowl, combine mixed greens, cherry tomatoes, and red onion. Drizzle with the garlic and lime dressing and toss gently to combine.
