Prepare the Pork
Trim any excess fat from the pork shoulder and cut it into large chunks.

Season the Pork
In a large bowl, mix together salt, black pepper, cumin, oregano, garlic powder, and onion powder. Rub the spice mixture all over the pork chunks.

Add Bay Leaves and Juices
Place the seasoned pork in a slow cooker. Add the bay leaves, orange juice, and lime juice.

Slow Cook
Cover and cook on low for 8 hours or on high for 4 hours, until the pork is fork-tender.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it with two forks.

Roast the Shredded Pork
Preheat the oven broiler. Spread the shredded pork on a baking sheet and broil for 5-7 minutes until the edges are crispy.

Serve with Cheese
Sprinkle Cotija cheese over the crispy pork. Optionally, add toppings like chopped cilantro, diced onion, sliced radishes, sour cream, and salsa.
