Prepare the Pupusa Dough

    Mix the Dough

    In a large bowl, combine masa harina and salt. Gradually add warm water, mixing with your hands until a smooth and pliable dough forms. Let it rest for 20 minutes, covered with a damp cloth.

Prepare the Filling

    Prepare Pork Belly

    Cook the smoked pork belly until crispy, then chop it into small pieces. Set aside to cool.

    Combine Filling Ingredients

    In a bowl, mix the chopped smoked pork belly with shredded cheese. Set aside.

Assemble and Cook Pupusas

    Form the Pupusas

    Divide the dough into 8 equal portions. Flatten each portion into a disc, place a spoonful of the filling in the center, and fold the dough over to seal. Gently flatten the pupusas.

    Cook the Pupusas

    Heat a skillet or griddle over medium heat. Cook each pupusa for about 4-5 minutes on each side, or until golden brown and cooked through.

Prepare the Romana Salad

    In a bowl, combine romaine lettuce, diced tomato, and sliced red onion. Drizzle with lime juice and olive oil. Season with salt and pepper to taste. Toss gently to combine.

Prepare the House Salsa

    In a bowl, mix diced tomatoes, chopped red onion, jalapeño, cilantro, and lime juice. Season with salt to taste. Let it sit for at least 15 minutes for flavors to meld.
