Roasted Jalapeño Aioli
Method
Fries Preparation

Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips to make fries.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Fry the Potatoes
Fry the soaked and drained potatoes in batches until golden brown and crispy, about 5-7 minutes per batch.

Drain and Season
Remove fries from the oil and drain on paper towels. Season with salt while hot.

Roasted Jalapeño Aioli Preparation

Roast the Jalapeños
Preheat the oven to 400°F (200°C). Place jalapeños on a baking sheet and roast for 15-20 minutes until skin is blistered. Remove and let cool.

Prepare the Aioli
Once cooled, remove the stems and seeds from jalapeños. Blend with mayonnaise, garlic, lime juice, and salt until smooth.
