Fry the Shrimp
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the marinated shrimp in batches. Fry until golden brown and cooked through, about 2-3 minutes per side. Remove and drain on paper towels.

Prepare Tortillas
In the same skillet, add a little more oil if necessary. Fry each corn tortilla for about 30 seconds on each side until crispy and lightly golden. Remove and drain on paper towels.

Assemble Tacos
Place a few pieces of fried shrimp in each tortilla. Top with chopped cilantro and serve immediately.

Prepare Salad
In a large bowl, combine chopped Romana lettuce, halved cherry tomatoes, and sliced cucumber.

Dress the Salad
In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper to taste. Drizzle over the salad and toss to combine.

In a small bowl, mix together sour cream, finely chopped chipotle peppers, lime juice, garlic powder, and salt to taste. Stir until smooth and well combined.
