Preparing the Codfish

    Prepare the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and free of lumps. Let it rest for about 15 minutes.

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a bit of batter into it; if it sizzles and bubbles, it’s ready.

    Fry the Cod

    Dip each cod fillet into the batter, ensuring it is well-coated. Carefully place the battered cod into the hot oil and fry for about 4-5 minutes, or until golden brown and crispy. Remove and drain on paper towels.

Making the Chipotle Slaw

    Combine Ingredients

    In a large bowl, combine the shredded cabbage, grated carrot, minced chipotle, mayonnaise, lime juice, salt, and black pepper. Mix well until all the ingredients are thoroughly combined.

    Chill the Slaw

    Cover the slaw and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

Serving the Dish

    Plate the Codfish

    Serve the fried codfish hot, topped with a generous portion of chipotle slaw. You can also serve it with lime wedges on the side for added flavor.
