Chorizo Preparation

Mix the spices
In a bowl, combine the paprika, cumin, chili powder, garlic powder, onion powder, salt, black pepper, and red pepper flakes. Mix well.

Prepare the chorizo
In a large mixing bowl, combine the ground pork with the spice mixture. Add the olive oil and mix thoroughly until the spices are evenly distributed throughout the meat. Cover and let it marinate in the refrigerator for at least 30 minutes.

Cook the chorizo
Heat a skillet over medium heat. Once hot, add the marinated chorizo mixture. Cook for about 8-10 minutes, breaking it apart with a spatula, until it’s fully cooked and slightly crispy. Set aside.

Prepare the toppings
While the chorizo is cooking, shred the cabbage and chop the cilantro. In a small bowl, mix the shredded cabbage with lime juice, and season with a pinch of salt.

Assemble the dish
In a serving dish, layer the cooked chorizo, followed by the cabbage mixture. Crumble feta cheese on top and garnish with fresh cilantro. Serve warm.
