Chiles

Marinade

Method

Preparation

  1. 1

    Prepare the Chiles

Wash the jalapeño and serrano peppers under cold water. Pat them dry with a paper towel.

  2. 2

    Make the Marinade

In a mixing bowl, combine the apple cider vinegar, olive oil, minced garlic, salt, black pepper, cumin powder, and sugar. Whisk until well blended.

Grilling

  1. 3

    Preheat the Grill

Preheat your wood-fired grill to a high heat, around 400°F (200°C).

  2. 4

    Marinate the Chiles

Place the washed chiles into a resealable plastic bag or container. Pour the marinade over the chiles, ensuring they are evenly coated. Seal the bag and let them marinate for at least 30 minutes.

  3. 5

    Grill the Chiles

Once the grill is hot, place the marinated chiles directly on the grill grates. Grill for about 8-10 minutes, turning occasionally, until they are charred and blistered on all sides.

Serving

  1. 6

    Serve

Remove the charred chiles from the grill and let them cool slightly. Serve them warm as a side dish or topping for tacos, nachos, or salads.
