For the Blackened Salmon

Prep the Salmon
Pat the salmon fillets dry with a paper towel. This helps the seasoning stick better.

Season the Salmon
Rub both sides of the salmon fillets with cajun seasoning evenly.

Cook the Salmon
Place the seasoned salmon fillets in the hot skillet. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and has a blackened crust.

Prepare the Salad Base
In a large bowl, add the mixed greens as the base of the salad.

Add Toppings
Top the mixed greens with grilled pineapple, crumbled feta cheese, and pumpkin seeds.
For the Grilled Pineapple Vinaigrette

Blend the Dressing
In a blender, combine the grilled pineapple, olive oil, apple cider vinegar, honey, salt, and black pepper. Blend until smooth.

Drizzle the vinaigrette over the prepared salad and toss gently to combine.

Place the blackened salmon fillets on top of the tossed salad and serve immediately.
