Method

Preparation

  1. 1

    Prepare the Jalapeño

Char the jalapeño over an open flame or under a broiler until the skin is blackened and blistered, about 5-7 minutes. Once charred, place it in a bowl and cover with plastic wrap for 10 minutes to steam. After steaming, peel off the charred skin, remove the seeds, and finely chop the jalapeño.

  2. 2

    Prepare Other Ingredients

Rinse and drain the black beans if using canned. If using fresh sweet corn, boil it for 3-4 minutes, then cool and cut the kernels off the cob. Dice the tomato and chop the red onion and cilantro.

Mixing

  1. 3

    Combine Ingredients

In a large mixing bowl, combine the black beans, sweet corn, diced tomato, red onion, chopped cilantro, and minced garlic. Add the chopped jalapeño to the mixture.

  2. 4

    Add Seasoning

Drizzle the lime juice and olive oil over the mixture. Sprinkle with salt and black pepper. Gently toss everything together until well combined.

Serving

  1. 5

    Chill and Serve

Let the salsa sit for at least 15 minutes to allow the flavors to meld. Serve chilled with tortilla chips or as a topping for tacos and grilled meats.
