Prepare the Barbacoa

Soak the Chiles
In a medium bowl, soak the guajillo and ancho chiles in hot water for about 15 minutes until softened. Drain and remove the stems and seeds.

Cook the Beef
In a large pot or Dutch oven, heat a little oil over medium-high heat. Season the beef with salt and sear on all sides until browned. Remove the beef and set aside.

Assemble the Tacos

Prepare the Broth
Ladle some of the barbacoa broth into a bowl for dipping.

Heat the Tortillas
In a skillet, dip each corn tortilla briefly in the hot barbacoa broth to soften, then place on a flat surface.

Add Cheese and Filling
Sprinkle a layer of Monterey Jack and cheddar cheese on one half of each tortilla, followed by a generous portion of the shredded beef.

Serve
Serve the tacos hot with a side of Mexican rice and refried beans, alongside the bowl of barbacoa broth for dipping.
