    Prepare the Onions

    Peel the onions and slice them into 1/2 inch thick rings. Separate the rings and set aside.

    Make the Batter

    In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Mix well. Gradually whisk in the buttermilk until the batter is smooth.

    Coat the Onion Rings

    Dip each onion ring into the batter, allowing excess to drip off. Then coat in panko breadcrumbs, pressing gently to adhere.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Onion Rings

    Carefully add the coated onion rings in batches to the hot oil, frying for 2-3 minutes or until golden brown. Remove and place on paper towels to drain excess oil.
