Prepare the Steak
Season the ribeye steak with salt and black pepper on both sides.

Cook the Steak
Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the seasoned steak and cook for about 4-5 minutes on each side or until it reaches your desired level of doneness. Remove from skillet and let it rest for a few minutes.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add sliced onions, green bell pepper, and minced garlic. Sauté until the vegetables are tender, about 5 minutes.

Once the steak has rested, slice it thinly against the grain.

Place the sliced steak into the sub rolls. Top with sautéed vegetables and provolone cheese slices.
