Scoop Out the Flesh
Once the potatoes are cool enough to handle, cut them in half lengthwise. Scoop out most of the flesh, leaving about 1/4 inch of potato on the skin to create a sturdy base.

Season and Oil the Skins
Brush the potato skins with olive oil and sprinkle with salt and black pepper. Place them skin-side up on a baking sheet.

Second Bake
Return the potato skins to the oven and bake for another 10-15 minutes, or until they are crispy and golden.

Fill with Toppings
Remove the skins from the oven and fill each with shredded cheddar cheese, crumbled bacon, and chopped green onions.

Melt the Cheese
Return the filled potato skins to the oven and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.

Remove from the oven and let cool for a minute. Serve hot with sour cream on the side.
