    Prepare the Potatoes

    Wash the Russet potatoes thoroughly and peel them if desired. Cut the potatoes into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potato strips in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

    Heat the Oil

    In a deep fryer or a large heavy pot, heat the vegetable oil to 350°F (175°C).

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove excess moisture.

    Fry the Potatoes

    Carefully add the dried potato strips to the hot oil in small batches. Fry for about 5-7 minutes or until they are golden brown and crispy.

    Drain and Season

    Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. Immediately season with salt, pepper, and paprika to taste.
