    Slice the yellow onions thinly. In a large pot, melt the butter and olive oil over medium heat. Add the onions and sauté until they are caramelized and golden brown, about 25-30 minutes, stirring occasionally.

    Once the onions are caramelized, add the white wine, scraping the bottom of the pot to deglaze. Let it simmer for about 5 minutes, then add the beef broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and let it simmer for 30 minutes.

    Prepare the Bread

    While the soup simmers, slice the baguette into thick slices. Toast the slices in the oven until golden brown.

    Assemble the Gratinee

    Preheat your oven to 400°F (200°C). In oven-safe bowls, ladle the soup and top each with toasted baguette slices. Sprinkle generously with Gruyère and Parmesan cheese.

    Place the bowls on a baking sheet and bake in the preheated oven for about 15 minutes, or until the cheese is melted and bubbly. For extra browning, you can broil for an additional 2-3 minutes.
