Bake the Potatoes
Preheat your oven to 400°F (200°C). Wash the russet potatoes thoroughly, then poke several holes in them with a fork. Rub the potatoes with olive oil and sprinkle with salt. Place them on a baking sheet and bake for about 45-60 minutes, or until the skins are crispy and the insides are soft.

Add Fillings
Sprinkle a generous amount of cheddar cheese and bacon bits inside each potato skin. Place them back on the baking sheet and return to the oven.

Bake Again
Bake the stuffed potato skins for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Serve
Remove from the oven and let cool for a couple of minutes. Top with sour cream and chopped green onions before serving.
