Prepare the Cèpes

If using dried cèpes, soak them in warm water for about 20 minutes until they are soft. If using fresh cèpes, clean and slice them.

Cook the Tagliatelle

Bring a large pot of salted water to a boil. Add the tagliatelle and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Make the Cream Sauce

In a large pan, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant. Add the prepared cèpes and cook for about 5 minutes.

Combine Ingredients

Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted and combined. If the sauce is too thick, add reserved pasta water as needed. Season with salt and black pepper.

Mix Pasta and Sauce

Add the drained tagliatelle to the sauce and toss to combine, ensuring the pasta is well coated with the cèpes cream.

Serve

Garnish with chopped fresh parsley and additional Parmesan cheese if desired. Serve immediately.
