Marinate the Beef

In a large bowl, combine the beef, red wine, thyme, bay leaves, salt, and pepper. Cover and marinate in the refrigerator for at least 4 hours or overnight.

Cook the Bacon

In a large Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the fat in the pot.

Brown the Beef

Remove the beef from the marinade (reserve the marinade) and pat dry. In the same pot, brown the beef in batches over medium-high heat. Remove and set aside.

Sauté Vegetables

In the same pot, add onions, carrots, and garlic. Sauté until softened, about 5 minutes.

Combine Ingredients

Sprinkle flour over the vegetables and stir to coat. Add the reserved marinade, beef broth, and browned beef back into the pot. Add back the bacon. Bring to a simmer.

Slow Cook

Cover the pot and simmer on low heat for about 2-3 hours or until the beef is tender. Stir occasionally.

Add Mushrooms

In the last 30 minutes of cooking, add the quartered mushrooms.

Pommes Purée

Cook Potatoes

In a large pot, cover the potatoes with cold water and add salt. Bring to a boil and cook until tender, about 15-20 minutes.

Drain and Mash

Drain the potatoes and return them to the pot. Mash the potatoes until smooth.

Add Butter and Cream

Incorporate the butter and heavy cream into the mashed potatoes. Stir until creamy and season with salt to taste.
