Preparation of Pommes Château
Cook the Potatoes
Peel the pommes château and place them in a pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and set aside.
Cooking the Salmon
Sauté the Spinach
In a skillet, add a little olive oil and sauté the fresh spinach until wilted. Season with salt and pepper. Remove from skillet and set aside.
Cook the Salmon
In the same skillet, add a bit more oil if needed. Season the salmon fillets with salt and pepper. Sear them for about 4-5 minutes on each side until cooked through. Remove from heat.
Preparing Sorrel Cream
Make the Sorrel Cream
In a saucepan, bring the heavy cream to a gentle simmer. Add the chopped sorrel and lemon juice. Cook for a few minutes until the sorrel wilts and the cream thickens slightly. Season with salt and black pepper to taste. Blend until smooth if desired.
Plating the Dish
Serve
On each plate, place a portion of sautéed spinach, a salmon fillet, and a few pommes château. Drizzle with sorrel cream and serve immediately.
