Sauté the Onions

In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 25-30 minutes.

Add Garlic and Deglaze

Stir in the minced garlic and cook for another minute. Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom.

Simmer the Soup

Add the beef broth, thyme, bay leaf, salt, and pepper. Bring to a simmer and let cook for 20-25 minutes to meld the flavors.

Prepare the Baguette

While the soup is simmering, preheat the oven to 400°F (200°C). Place the baguette slices on a baking sheet and toast them in the oven until golden brown, about 5-7 minutes.

Serve the Soup

Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, top each with toasted baguette slices, and sprinkle generously with Gruyère cheese.

Broil

Place the bowls under the broiler for 2-3 minutes, or until the cheese is bubbly and golden. Remove from the oven and garnish with chopped parsley before serving.
