Method

Lobster Preparation

    Poach the Lobster

    In a pot, bring water and salt to a boil. Add the lobster tails and reduce to a simmer. Cook for 5-7 minutes until the lobster is opaque and cooked through. Remove and let cool slightly, then slice in half lengthwise.

Beef Preparation

    Cook the Beef

    Season the beef filets with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the filets for 3-4 minutes on each side for medium-rare. Remove from heat and let rest.

Spinach Preparation

    Sauté the Spinach

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add fresh spinach and cook until wilted, about 2-3 minutes. Season with salt to taste.

Hollandaise Sauce Preparation

    Make the Hollandaise Sauce

    In a bowl, whisk together egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler). Slowly drizzle in melted butter while whisking continuously until the sauce thickens. Season with salt and cayenne pepper.

Frites Preparation

    Prepare the Frites

    Peel and cut potatoes into thin strips. Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Drain on paper towels and season with salt.

Assembly

    Serve the Dish

    On a plate, arrange the sautéed spinach, place the beef filet on top, and add the poached lobster tail. Drizzle with Hollandaise sauce and serve with frites on the side.
