Preparing the Frites

Cut and Soak Potatoes

Peel and cut the russet potatoes into thin strips. Soak them in cold water for at least 30 minutes to remove excess starch.

Fry the Potatoes

Heat the vegetable oil in a deep fryer or a large pot to 350°F (175°C). Drain the potatoes and pat them dry. Fry them in batches until golden brown and crispy, about 5-6 minutes. Remove and drain on paper towels, then season with salt.

Cooking the Onions

Sauté the Onions

In a skillet, melt the butter and olive oil over medium heat. Add the sliced onions, sugar, and salt. Cook slowly, stirring frequently, until the onions are caramelized and golden brown, about 20-25 minutes.

Making the Burgers

Form the Patties

In a bowl, mix the ground beef chuck with salt, black pepper, and garlic powder. Form into two equal-sized patties.

Cook the Patties

Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side for medium doneness. In the last minute of cooking, place a slice of Gruyère cheese on each patty to melt.

Build the Burger

Spread Dijonnaise on the bottom half of the burger buns. Place the cooked patty with melted Gruyère on top, followed by a generous amount of caramelized onions. Close with the top half of the bun.

Serve

Serve the burgers alongside the crispy frites.
