Prepare the Tzatziki Sauce

Make the Tzatziki
In a mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and chopped dill. Mix well until all ingredients are incorporated. Refrigerate for at least 30 minutes to let the flavors meld.

Cook the Fries
Preheat your oven to 220°C (425°F). Toss the cut potatoes with olive oil and salt. Spread them in a single layer on a baking sheet and bake for 30-35 minutes, flipping halfway through until golden and crispy.
Assemble the Gyros

Warm the Pita
In a skillet or directly on a grill, warm the pita bread for about 1-2 minutes on each side until soft and pliable.

Layer the Ingredients
Place a generous amount of rotisserie pork on each warmed pita. Add a few spoonfuls of tzatziki sauce, followed by slices of red onion, diced tomato, and a sprinkle of fresh parsley.

Add the Fries
Top each gyro with a handful of hand-cut fries.

Fold the pita in half to wrap the filling securely. Serve immediately while warm.
