Sauté the Onions and Garlic
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute.

Cook the Spinach
Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Stir occasionally to ensure even cooking.

Combine Filling Ingredients
Remove the skillet from heat and let the mixture cool slightly. In a large bowl, combine the cooked spinach and onion mixture with crumbled feta cheese, beaten egg, salt, black pepper, and chopped dill (if using). Mix well to combine.

Preheat the Oven
Preheat your oven to 180°C (350°F).

Fill and Fold
Place a generous amount of the spinach filling along one edge of the phyllo sheets. Fold the sides over the filling and roll the phyllo tightly to form a log. Brush the top with additional melted butter and place seam-side down on a baking tray.

Bake the Spanakopita
Once assembled, place the baking tray in the preheated oven. Bake for 25-30 minutes or until the phyllo is golden brown and crispy.

Cool and Serve
Remove from the oven and let it cool for a few minutes before slicing. Serve warm or at room temperature.
