Preparing the Souvlaki

Marinate the Meat
In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Add the cubed chicken or pork to the marinade and toss until well coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours.

Prepare Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. After marinating, thread the meat onto the skewers, leaving some space between each piece.

Grill the Skewers
Preheat a grill or grill pan over medium-high heat. Cook the skewers for about 10-12 minutes, turning occasionally, until the meat is fully cooked and has nice grill marks.
Preparing the Sides

Cook the Fries or Rice
If using fries, fry or bake them according to package instructions. If using rice, cook according to the package instructions until fluffy.

Prepare the Salad
In a large bowl, combine chopped lettuce, diced cucumbers, diced tomatoes, and sliced red onion. Toss gently to mix.
Serving the Dish

Assemble the Plates
On a serving plate, place the cooked souvlaki skewers alongside the fries or rice. Add a side of salad and warm pita bread. Serve with tzatziki sauce on the side, garnished with additional diced tomatoes and red onion if desired.
