Souvlaki Preparation

    Marinate the Meat

    In a large bowl, combine olive oil, minced garlic, lemon juice, dried oregano, salt, and black pepper. Cut the chicken or pork into bite-sized cubes and add to the marinade. Toss well to coat, then cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

    Prepare Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning. After marinating, thread the marinated meat onto the skewers, leaving a little space between each piece.

Grilling

    Preheat Grill

    Preheat your grill to medium-high heat. You can also use a grill pan on the stove if preferred.

    Grill the Souvlaki

    Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the meat is cooked through and has nice grill marks.

Serving

    Prepare Pita

    While the meat is grilling, warm the pita bread on the grill for about 1-2 minutes on each side, or until soft and pliable.

    Assemble the Dish

    Remove the skewers from the grill. Serve the skewers with the warm pita bread and your choice of sauce (Tzatziki or hot sauce) on the side.
