Roasting Vegetables

Prepare the Vegetables
Preheat the oven to 400°F (200°C). Wash and slice the summer squash, zucchini, red bell pepper, yellow bell pepper, tomatoes, and red onion into bite-sized pieces.

Roast the Vegetables
Spread the chopped vegetables on a baking sheet. Drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat evenly. Roast in the preheated oven for about 25-30 minutes or until tender and lightly browned, stirring halfway through.

Prepare the Potatoes
While the vegetables are roasting, wash and cut the potatoes into thin strips to make fries.

Bake the Fries
Toss the potato strips with olive oil, salt, black pepper, and paprika. Spread them on a separate baking sheet in a single layer and bake in the oven for 20-25 minutes, flipping halfway through, until golden and crispy.

Warm the Pita
Warm the pita bread in a microwave or oven for a few minutes until soft.

Assemble the Gyros
Lay the warm pita flat and fill it with a generous portion of roasted vegetables, crispy fries, and a dollop of tzatziki sauce. Roll it up and serve immediately.
