Rinse the Rice
In a fine mesh strainer, rinse the long-grain rice under cold running water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy.

Chop the Vegetables
Dice the medium onion and mince the garlic cloves finely. Set aside.

Toast the Rice
Add the rinsed rice to the saucepan. Stir well to coat the rice with the oil and cook for about 2-3 minutes, allowing it to lightly toast and absorb the flavors.

Add Liquid and Seasonings
Pour in 2 cups of vegetable broth and add salt, black pepper, dried thyme, and the bay leaf. Stir to combine.

Simmer the Rice
Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
