Preparation of Reuben Gyro

    Bake the Corned Beef

    Preheat your oven to 180°C (350°F). Place the corned beef on a baking tray and cover it with aluminum foil. Bake for 25-30 minutes until heated through. Remove from the oven and let it rest for 10 minutes before slicing thinly.

    Prepare the Pita

    While the corned beef is baking, slice the pita bread in half to create pockets. You can warm them in a dry skillet over medium heat for 1-2 minutes or wrap in foil and warm in the oven for the last 5 minutes of the corned beef baking time.

    Assemble the Gyro

    Once the corned beef is ready, layer the sliced corned beef inside the warm pita pockets. Add a generous drizzle of Thousand Island dressing, followed by sauerkraut, slices of tomato, and top with Swiss cheese.

    Cut the Potatoes

    Wash and peel the potatoes. Cut them into thin strips to create fries. Aim for uniform size to ensure even cooking.

    In a large bowl, toss the cut fries with olive oil, salt, and black pepper until evenly coated.

    Bake the Fries

    Spread the seasoned fries in a single layer on a baking sheet. Bake in the same oven as the corned beef for 30-35 minutes, flipping halfway through, until golden and crispy.
