Marinate the Pork
In a medium bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Mix well.

Prepare the Pork
Trim any excess fat from the pork tenderloin and cut it into bite-sized cubes. Add the pork to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare the Grill
Preheat your grill or grill pan over medium-high heat. If using skewers, soak wooden skewers in water for at least 30 minutes to prevent burning.

Grill the Pork
Thread the marinated pork onto skewers (if using). Grill the pork for about 10-12 minutes, turning occasionally, until cooked through and slightly charred.

Prepare the Vegetables
While the pork is grilling, chop the tomatoes and red onion into thin slices. Roughly chop the fresh parsley.

Warm the Pita
Heat the pita bread on the grill for about 1 minute on each side until warm and slightly toasted.

Place a few pieces of grilled pork in the center of each pita. Top with sliced tomatoes, red onions, chopped parsley, and a generous dollop of tzatziki sauce.

Roll up the pita to enclose the filling and serve immediately while warm.
