Begin by cutting each pita bread into 8 wedges. You can do this by slicing each pita in half and then cutting each half into 4 triangles.

Coating the Pita
Place the pita wedges in a large bowl and drizzle the seasoned olive oil mixture over them. Toss the wedges gently to ensure they are evenly coated with the oil and spices.

Heating the Oil
In a large, deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches approximately 350°F (175°C). You can test the oil by dropping in a small piece of pita; if it sizzles, the oil is ready.

Frying the Pita Wedges
Carefully add a few pita wedges to the hot oil, ensuring not to overcrowd the pan. Fry the wedges for about 2-3 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil.

Draining Excess Oil
Place the fried pita crisps on a plate lined with paper towels to drain any excess oil. Sprinkle with additional salt if desired.
