Preparation of Ingredients

Prepare the Vegetables
Wash and chop the mixed greens, tomatoes, onion, green peppers, cucumbers, and pepperoncinis into bite-sized pieces.

Grill the Corn
If using fresh corn, grill it until cooked through, about 10 minutes. Let it cool, then cut the kernels off the cob. If using canned or frozen corn, simply heat it according to package instructions.

Prepare the Olives
Drain and slice the kalamata olives if they are whole.
Cooking Fries

Cook the Fries
Prepare the frozen fries according to the package instructions, either by baking or frying until they are golden and crispy.
Assembling the Gyro

Warm the Pita
Warm the pita breads in a dry skillet or microwave for a few seconds until they are soft and pliable.

Layer the Filling
On each pita, layer a generous amount of mixed greens, followed by chopped tomatoes, onions, green peppers, cucumbers, grilled corn, kalamata olives, and pepperoncinis.

Add Feta
Sprinkle feta cheese over the top of the layered vegetables.

Add Fries
Top the filling with a handful of cooked fries for added crunch.

Drizzle Sauce
Drizzle your choice of sauce over the top of the loaded gyro.

Wrap the Pita
Fold the pita over the filling and serve immediately, with extra sauce on the side if desired.
