Prepare the Falafel

Blend Ingredients
In a food processor, combine the canned chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, salt, and black pepper. Blend until you have a coarse mixture.

Chill the Mixture
Transfer the mixture to a bowl, cover it, and refrigerate for at least 30 minutes to allow it to firm up.

Shape the Falafel
After chilling, form the mixture into small balls or patties, about the size of a golf ball.

Fry the Falafel
In a large skillet, heat olive oil over medium heat. Once hot, add the falafel and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on a paper towel.

Cook the Fries
Prepare the fries according to package instructions or make homemade fries and set aside.
Assemble the Gyro

Warm the Pita
Warm the pita bread in a dry skillet or microwave for a few seconds until pliable.

Layer the Ingredients
In the center of each pita, place a few pieces of falafel, followed by the toppings: tomatoes, onion, lettuce, pepperoncinis, olives, cucumber, corn, and feta cheese.

Add Fries
Top with a handful of cooked fries for that loaded effect.

Drizzle Sauce
Drizzle your choice of sauce over the top and fold the pita over the fillings.
