In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper until well combined.

Marinate the Lamb

Add the cubed lamb shoulder to the marinade. Stir well to coat the lamb pieces evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Prepare Skewers

If using wooden skewers, soak them in water for 30 minutes to prevent burning. If using metal skewers, you can skip this step.

Assemble the Skewers

Thread the marinated lamb cubes onto the skewer, alternating with chunks of bell pepper and red onion for added flavor and color.

Cook the Skewers

Preheat a grill or grill pan over medium-high heat. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired level of doneness (145°F / 63°C for medium-rare).
