Lamb Preparation

    Marinate the Lamb

    In a bowl, combine olive oil, minced garlic, dried oregano, ground cumin, salt, black pepper, and lemon juice. Mix well to create a marinade.

    Coat the Lamb

    Rub the marinade all over the leg of lamb, ensuring it’s evenly coated. Cover with plastic wrap and let marinate in the refrigerator for at least 2 hours, or overnight for best results.

    Cook the Lamb

    Preheat your oven to 325°F (165°C). Place the marinated leg of lamb in a roasting pan and cook in the preheated oven for 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.

    Slice the Lamb

    Once cooked, remove the lamb from the oven and let it rest for 10 minutes before slicing it thinly against the grain.

    Prepare the Pita

    Warm the pita bread in a skillet or microwave until soft and pliable.

    Assemble the Gyro

    On each pita, layer the sliced lamb, tzatziki sauce, sliced tomatoes, red onion, and cucumber.

    Wrap and Serve

    Wrap the pita around the filling, and secure with a piece of parchment paper or foil. Serve immediately.

    Prepare Sides

    If serving with rice, fries, or roasted lemon potatoes, prepare these according to your preferred method. For roasted potatoes, toss cubed potatoes with olive oil, lemon juice, salt, and pepper and roast at 400°F (200°C) for 30-35 minutes.
