Method
Lamb Preparation

Prepare the Lamb
Preheat the oven to 180°C (350°F).

In a bowl, mix together the olive oil, minced garlic, salt, black pepper, ground cumin, ground coriander, paprika, and lemon juice to create a marinade.

Rub the marinade all over the leg of lamb, ensuring it is well coated. Let it marinate for at least 30 minutes.

Place the marinated lamb in a roasting pan and roast in the preheated oven for approximately 1.5 to 2 hours, or until the internal temperature reaches 60°C (140°F) for medium-rare.

Once cooked, remove the lamb from the oven and let it rest for 15-20 minutes before shaving it thinly.

Mix well until all ingredients are thoroughly combined. Refrigerate until ready to use.
Fries Preparation

Prepare the Fries
Peel the potatoes and cut them into thick fries.

Remove the fries and drain them on paper towels. Season with salt to taste.
Assembling the Gyro

Assemble the Gyro
Warm the pita bread slightly in the oven or on a skillet.

Layer the shaved lamb, tzatziki sauce, sliced red onion, diced tomato, and chopped parsley on the pita.

Wrap the pita around the filling and serve with hand-cut fries on the side.
