Sauté the Aromatics
In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, diced celery, and minced garlic. Sauté for about 5-7 minutes, until the vegetables are softened and the onion is translucent.

Add Lentils and Liquids
Stir in the dried lentils, vegetable broth, and canned diced tomatoes. Bring the mixture to a boil.

Season the Soup
Add the bay leaves, thyme, cumin, salt, black pepper, and red pepper flakes to the pot. Stir well to combine.

Simmer the Soup
Once boiling, reduce the heat to low and let the soup simmer uncovered for about 30-35 minutes, or until the lentils are tender. Stir occasionally.

Remove the bay leaves from the soup. Stir in the chopped fresh parsley and lemon juice just before serving.
