Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to make fries.

Preheat your oven to 425°F (220°C).

Toss the cut fries in a bowl with olive oil, salt, and black pepper. Spread them out on a baking sheet in a single layer and bake for 25-30 minutes until golden and crispy.

Preheat the oven to 350°F (175°C). Season the leg of lamb with minced garlic, fresh rosemary, salt, black pepper, and lemon juice.

Place the seasoned leg of lamb in a roasting pan and roast in the preheated oven for about 1.5 hours or until the internal temperature reaches 145°F (63°C) for medium-rare.

Once cooked, let the lamb rest for 10 minutes, then slice it thinly.
