Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into evenly sized fries, about 1/4 inch thick.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Preheat the Oven
Preheat your oven to 425°F (220°C).

Season and Bake
Drain and pat the fries dry. Toss them with olive oil, salt, and black pepper. Spread them in a single layer on a baking sheet and bake for 25-30 minutes or until golden brown and crispy.

Prepare the Veggies
Chop the bell peppers, zucchini, and red onion into bite-sized pieces.

Season the Veggies
In a bowl, toss the chopped veggies with olive oil, garlic powder, ground cumin, salt, and pepper.

Roast the Veggies
Spread the seasoned veggies on a baking sheet and roast in the oven for 20-25 minutes, until tender and slightly charred.

Prepare Falafel (if using mix)
If using falafel mix, prepare according to package instructions. If using pre-made falafel, skip this step.

Layer the Fries
Once the fries are cooked and crispy, remove them from the oven and place them on a serving plate.

Add Toppings
Top the fries with the roasted veggies or falafel, followed by the cherry tomatoes and sliced red onion.

Drizzle Sauce
Finish with a generous drizzle of tzatziki sauce or your choice of sauce.
