    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thick fries of about 1/4 inch thickness.

    Fry the Potatoes

    In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C). Carefully add the cut fries in batches and fry until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while hot.

Lamb Souvlaki

    Marinate the Lamb

    In a bowl, combine olive oil, minced garlic, dried oregano, lemon juice, salt, and black pepper. Add the cubed lamb shoulder and toss to coat. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.

    Skewer and Grill the Lamb

    Preheat the grill to medium-high heat. Thread the marinated lamb cubes onto the soaked wooden skewers. Grill for about 8-10 minutes, turning occasionally, until the lamb is cooked through and has nice grill marks.

Homemade Sauce

    Make the Sauce

    In a mixing bowl, combine Greek yogurt, minced garlic, grated cucumber, chopped dill, lemon juice, and salt. Mix well until smooth and set aside in the refrigerator to chill while preparing the rest.

Assembly

    Assemble the Gyro Fries

    On a large plate, layer the hot fries. Top with the grilled lamb souvlaki skewer, diced tomatoes, thinly sliced red onion, and a generous drizzle of the homemade sauce. Garnish with chopped parsley before serving.
