Preparation of Ingredients

Cook Orzo
Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.

Chop Vegetables
While the orzo is cooking, chop the cherry tomatoes in half, peel and dice the cucumber, slice the kalamata olives, finely chop the red onion, and dice the green pepper. Set aside.

Prepare Fresh Basil and Feta
Stack the fresh basil leaves, roll them tightly, and slice them into thin strips. Crumble the feta cheese into small pieces.
Making the Greek Dressing

Combine Dressing Ingredients
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, oregano, and minced garlic clove until well combined.

Season the Dressing
Add salt and black pepper to the dressing to taste. Adjust seasoning as necessary.
Combine Salad

Mix Salad Ingredients
In a large mixing bowl, combine the cooked orzo, chopped vegetables, fresh basil, and crumbled feta cheese.

Add Dressing
Pour the prepared Greek dressing over the salad and toss everything together until evenly coated.
Serve

Chill and Serve
Let the salad sit for at least 30 minutes in the refrigerator to allow the flavors to meld. Serve chilled or at room temperature.
